Update, tried a fair few of the methods I had gone through again, but to no avail!! I suspect maybe the board might be a bit iffy, so swapped the ucm/usb motherboard for the ucm/eth motherboard and it seems to be working again now. Will keep an eye on it and see if it happens again, if not, it looks like maybe my board needs some checking!
