I understand your reasons for wanting to stick with XP.
With the right config though win7 is actually faster (in my experience)

There are utilities out there to strip all the baggage off the win7 install. If you have the iso or the installer disk its quite straight forward.

If you havent tried it already, its also worth having a look at windows thin pc. This is win7 based, and works great in a VM, especially where resources are limited. It does have its own issues (don't they all) but may get you what you want.

If you are truly sandboxed, and not using it to connect to internet, I would create a snapshot point and then switch off all unnecessary services, windows updates, etc.

All of this can be a great time waster, so if you choose to stay with XP I wouldnt blame you ;)
