Is it possible to force arm the system, say by sending (11#) instead of (11) in a text message to the UCM/GSM?

(11) will auto-arm the security system, ie if there are open zones they will be automatically bypassed. There is no need to add # to the text message

You should program the Bypass zones alarm to send an SMS so that bypassed zones are reported by text.
