My GSM (firmware 6.015) shows a bit of lag at times when it goes through the voice options. There would be silence of anything between 5 to 10 seconds and it then continues where it left off.

What could be causing that?

The voice menu by telephone or GSM always listens for voice or tones so that it can decode  busy and other call progress tones. If noise of certain frequencies is heard it will pause and stop talking for a short time. Hence you may be in a noisy environment which may have caused the voice to pause
