If I am stuck with CAT6 cables for PIRs and Keypads and these are not shielded what problems will I get. The builder has installed CAT6 based on my plan and I completely forgot to specify shielded for some of the items

It wiill prpobably be fine, as long as they are not near mains cables or otherĀ  npisy cables. Mains cables will induce a buzz in the keypad voice
CAT6 is twister pair so RS485 should not be aaffected, but voice and mic get noise

Unshielded CAT6 is usually fine for PIRs and keypads. Just keep cables away from mains power to avoid noise in the voice audio.
